The menu of Osteria Trulli in Arlington Heights, in suburban Chicago, celebrates authentic Pugliese cooking, including house-made pastas and seafood dishes that reflect the simplicity and flavors of southern Italy. Chef and owner Giovanni DeNigris opened the eatery at 1510 E. Hintz Road a decade ago, after relocating from Chicago’s Lincoln Square neighborhood.
“I wanted to do food from my land, my region, where I grew up with my mother and my grandmother,” DeNigris told the Daily Herald. DeNigris said he sources food from Puglia as much as possible, including extra-virgin olive oil, burrata, some pasta and wine. If he can’t source it directly, he makes it, he told the newspaper.
The menu features orecchiette con cime di rapa, a Pugliese classic, alongside myriad pasta and risotto dishes. Chef’s specials rotate every couple of weeks highlighting fresh seafood like whole roasted branzino and red snapper.
DeNigris grew up in Mola di Bari and moved to the United States in 1971, starting in New York before settling in Chicago, where he worked as executive chef for the Fairmont Hotel.
He said he gets “a hundred questions every day” from people planning trips to Puglia and he’s always happy to help with trip planning. (osteriatrulli.com)
