The new restaurant Provaré at 1523 W. Chicago Ave. in Chicago pushes boundaries with its convergence of Creole and Italian cuisines. The menu is “perfectly aligned with the saucy and spicy fare,” according to the Michelin Guide.
Provaré is the brainchild of chef and partner Jourdan Higgs, a native of suburban Oak Park. “On the menu, the chef pays homage to his Sicilian grandfather, and the results are just full of surprises. Our experience involved ‘crabby fries,’ shatteringly crisp calamari tucked with jalapenos and banana peppers, and tossed with cognac-splashed shrimp scampi,” Michelin writes.
Higgs told Forbes magazine that he was a big fan of making pasta dishes growing up, then started traveling to New Orleans, where he was introduced to different spices and seasonings. “I knew I wanted to blend the two together,” he explained.
Entrees include lobster bisque pasta; shrimp cognac scampi; a seafood trio of alfredo, shrimp, lobster, crab meat and rotini; and “all vodka” rigatoni pasta with pancetta, vodka, marinara sauce and cream. Add-ons include crawfish, chicken, shrimp, lamb chop, crab meat, salmon, lobster meat and lobster tail. Butter cake with strawberries and drizzled caramel is the only dessert on the menu, but it’s “a winner,” according to Forbes. Drinks include cocktails, wine and local artisan beer.
