Red Wine Vinaigrette
A vinaigrette is only as good as the quality of its ingredients. Finding an olive oil and wine vinegar you like may take some experimenting. Try a Chianti or Cabernet wine vinegar rather than the usual red wine vinegar for a mellower flavor and for salads use the best quality olive oil you can. Also, while you may prefer sea salt, finding one in a grind that is fine enough can be problematic. Look for a kosher sea salt, which is more of a flake than a nugget.
- 1/2 cup wine vinegar
- 3/4 cup extra virgin olive oil
- 1 to 2 garlic cloves, crushed or minced (more or less to taste)
- 1 cup purple onion, thinly sliceSea salt and pepper to taste
Combine all ingredients and store in covered jar.
